Honey is an expensive liquid obtained from bee’s metabolism and good for health.
Thus, honey adulteration and artificial honey often spread in the market. Public are often
confused by the circulation of this fake honey. To determine the authenticity of honey,
common people are trying to establish 'conventional theories' which come from their
experience. The purpose of this study is to identify some conventional methods of the
authenticity of honey testing that is often practiced by the community. Five types of honey
are tested using soluble test methods, cloudy test, foam-forming test, heating test, and
hexagon test. Two samples of honey were pure honey taken from known place, two doubtful
and one commercial type. Each honey type is tested three replications for each test parameter.
The results showed that through conventional tests and regular chemical tests still could not
ensure the authenticity of honey.
